For the Hash

  • 2 tablespoons olive oil divided
  • 1 pound breakfast sausage
  • 1 medium onion finely chopped
  • 4 cups butternut squash diced
  • 2 cups apples diced, tart varieties like Granny Smith
  • 1 teaspoon ground cinnamon
  • 0.25 teaspoon ground nutmeg
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.25 cup fresh parsley chopped, for garnish

Cooking Steps

  • In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the breakfast sausage, breaking it up with a spoon. Cook for 5 to 7 minutes until browned and fully cooked through, then remove and set aside.
  • In the same skillet, add the remaining tablespoon of olive oil and heat for a minute. Sauté the finely chopped onion for about 3 minutes until softened and translucent.
  • Stir in the diced butternut squash and cook for approximately 10 minutes, stirring occasionally until softened and golden on the edges.
  • Add the diced apples to the skillet and cook for an additional 5 minutes, stirring gently.
  • Sprinkle in the ground cinnamon, nutmeg, salt, and pepper. Stir well to coat the vegetables.
  • Return the cooked sausage to the skillet, stirring to combine. Cook for another 2 to 3 minutes.
  • Remove from heat and garnish with freshly chopped parsley before serving.

Notes

For best results, choose high-quality sausage and feel free to adjust spices to your taste. Leftovers can be stored in an airtight container for up to 3 days.
