Ingredients
  

For the Quinoa

  • 1 cup quinoa rinsed
  • 1.75 cups water

For the Dressing

  • 2 tablespoons lime juice
  • 2 tablespoons rice vinegar
  • 1 tablespoon fish sauce
  • 1 tablespoon sesame oil
  • 1 teaspoon brown sugar
  • 1 clove garlic minced
  • 1 small red chili pepper chopped
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper

For the Salad

  • 1 cup shredded carrots
  • 1 cup shredded red cabbage
  • 1 medium bell pepper thinly sliced
  • 1 medium cucumber diced
  • 0.5 cup fresh cilantro chopped
  • 0.25 cup green onions sliced
  • 0.33 cup peanuts chopped

Instructions
 

Preparation Steps

  • Rinse the quinoa under cold running water for about 30 seconds until the water runs clear. Drain well.
  • In a medium saucepan, combine the rinsed quinoa with water. Bring to a boil over medium-high heat, then reduce heat, cover, and simmer for 15 minutes.
  • Remove from heat and let it sit covered for 5 minutes. Fluff with a fork and let it cool.
  • In a small bowl, whisk together lime juice, rice vinegar, fish sauce, sesame oil, brown sugar, garlic, red chili pepper, salt, and black pepper until smooth.
  • In a large mixing bowl, combine cooled quinoa, shredded carrots, shredded red cabbage, bell pepper, cucumber, cilantro, and green onions.
  • Drizzle dressing over the salad and toss gently to coat.
  • Sprinkle chopped peanuts on top before serving.

Notes

Store leftovers in an airtight container for up to 3 days. Keep dressing separate until serving to retain crunchiness.
