Italian Halibut Chowder Recipe


2½ pounds halibut filets, raw
1 Peppers, sweet, red, raw; red bell pepper
1 Onions, raw
3 stalks Celery, raw
3 cloves Garlic, raw
¼ cup Oil, olive, salad or cooking
1 cup Tomato juice, canned, without salt added
½ cup apple juice
2 (16 ounce) cans Tomatoes, red, ripe, canned, whole, regular pack
2 tablespoons Parsley, raw
½ teaspoon Salt, table
½ teaspoon Spices, basil, ground
⅛ teaspoon Spices, thyme, dried
⅛ teaspoon Spices, pepper, black


 Step 1
Saute the peppers, celery, onion, and garlic in oil until tender. Add the tomato juice or water, apple juice, mashed tomatoes, and herbs. Simmer for 30 minutes.

 Step 2
Add halibut pieces to the soup. Cook until halibut is done, about 30 minutes. Salt and pepper to taste.
