Rice with Black Beans and Chickpeas

Ingredients

1 Ghee (Clarified Butter)
1 clove garlic, minced
1 cup uncooked basmati rice
2 teaspoons ground cumin
2 teaspoons ground coriander
1 teaspoon ground turmeric
1 teaspoon ground cayenne pepper
1 quart chicken stock
2 (15 ounce) cans garbanzo beans (chickpeas), drained and rinsed
2 (15 ounce) cans black beans, drained and rinsed
1 bunch chopped fresh cilantro
1 bunch chopped fresh parsley
¼ cup pine nuts
1 pinch salt and ground black pepper to taste

Directions

Step 1 
Take a deep-bottomed pan and add ghee(Clarified Butter) to it. Heat the ghee and add onions. Cook the onions until they become transparent. Now, add soaked basmati rice and all the spices. Add salt.

Step 2
Mix everything well and add water to cook the rice. When you see bubbles in the pan, add the boiled chickpeas and black beans into it.

Step 3
Keep the pot at simmer for 2 minutes. Take it out on a serving plate and garnish with coriander leaves.

Step 4
Your Middle Eastern rice with black beans and chickpeas is ready to be served.
